Potato and leek gratin

A mandoline will cut the potatoes quickly and to exactly the same thickness, although a sharp knife will also work. Instead of burying the potatoes and leeks in the cream, add a little milk to each layer of gratin; The potatoes become wonderfully crunchy and tender, and the cheese forms a melty, golden crust. The result is a rustic potato side rich with contrasting flavors and textures—a little crunch to complement the fillings, sauces, and purees on the plate. Heat leftovers in the oven until crisp and warm, then serve them with eggs and a side of fruit for breakfast.

This chicken pasta is cheesy with a smoky flavor, thanks to the combination of chipotle peppers and smoked Gouda cheese. If you want to enhance the smoky flavour, regular Gouda works too. Ham and Cheese Breakfast Casserole

This healthy update to breakfast toppings traditionally rich in ham and cheese is made lighter primarily by losing a few egg yolks and using skim milk. Gruyere cheese has a delicious nutty aroma and flavour, which means that with the relatively small amount in this recipe, you can still get a big impact. To finish the change, use nutritious, high-fiber, whole-grain bread instead of white bread. The results: Lots of flavor, half the calories and a third of the fat of the original.
