We just got back from our cruise and I’m feeling shaky if you know what I mean. Unfortunately, the food was just meh. Not the worst food I’ve ever had but not the best either.

When you are cooking for 8000 people I know I can’t expect it to be top notch but I think they err on the nice side to accommodate more plates.

We ate more eggs on our cruise than anything else because how can you ruin a fresh omelet or fried eggs? They had fake scrambled eggs at the buffet which was not done to any of us at our morning breakfasts.

It’s no joke that we eat a lot of eggs in our house. Boiled eggs, grilled eggs, omelettes, eggs with biscuits…what???? (This is absolutely important)

When I have company, I don’t like slaving over the frying pan while people stream downstairs. These cheesy baked eggs are the perfect breakfast recipe or weekend brunch dish.

What are baked eggs?

The ingredients for the egg mixture are simple: eggs, cottage cheese, a little flour, salt, and pepper jack cheese. The cheese completely disappears in these baked eggs. Trust me! Because I’m not a fan of cheese when it’s plain.

The great thing about this is that you can half it completely in an 8×8 or 9×9 inch pan.

The first time I made this simple baked eggs recipe, my husband had them for lunch and dinner. I love protein.

I once left a tray of eggs cooling on the counter while we were heading out on a date. My babysitter texted me, “What’s that in the pan on the table?”

“Why? Did you have some?” “You can totally have some,” I said.

Yes, of courseShe said. “It was delicious. Can I get the recipe? My kids will love it“.

How to make baked eggs

  1. Preheat the oven to 350 degrees and grease a 9 x 13 baking pan with melted butter.
  2. Beat the eggs, peppercorns (or any other cheese you prefer), cottage cheese, flour, and salt in a large bowl. Pour the mixture into the prepared baking dish.
  3. Bake in the preheated oven until the eggs are completely cooked, 50-60 minutes. Start checking it after about 45 minutes. Cut into squares and serve with salsa, sour cream, guacamole, tomatoes, onions, fresh herbs or Parmesan cheese. Store leftovers in the refrigerator.

Differences:

  • Add chopped cherry tomatoes or sun-dried tomatoes.
  • Add a handful of spinach.
  • Finish with a sprinkling of parmesan or feta cheese.
  • Season with red pepper flakes.
  • Add some bacon pieces on top.
  • Add some chopped vegetables.
  • Top with some herbs such as chopped parsley, chives or basil.
  • Season it with some hot sauce.

Freeze for up to 3 months.

  • Preheat the oven to 350 degrees and grease a 9×13 baking pan with melted butter.

  • Whisk eggs, peppercorns, cottage cheese, flour, and salt in a large bowl. Pour the mixture into the prepared baking dish.

  • Bake in the preheated oven until the eggs are completely cooked, 50-60 minutes. Start checking it after about 45 minutes. Cut into squares and serve with salsa, sour cream, guacamole, tomatoes, or onions if desired.

This recipe can be cut in half into an 8×8 or 9×9 baking dish. The baking time will be less, about 30-40 minutes.
