Open Ingredients Carbonara – Serves 8 People

  • 1 package Barilla® gluten-free pasta
  • 4 medium-sized potatoes, peeled
  • 10 ounces fresh celery (celery root) or kale
  • 1 teaspoon saffron
  • 1 cup of crunchy soybean flakes
  • 1 tablespoon of extra virgin olive oil
  • Salt and black pepper to taste

Open carbonara recipe:

  • Step 1: Boil peeled potatoes in boiling, lightly salted water until tender, then mash them in a bowl using a fork or potato masher.
  • Step 2: Peel and cut the celery into 1/2-inch cubes, then bake at 250 degrees for 20 minutes, until dry and lightly toasted.
  • Step 3: Place the saffron in a small bowl with half a cup of water and wait until the water turns yellow. Pour into bowl with mashed potatoes. Add black pepper to taste and whisk to form a smooth, homogeneous “sauce.”
