These healthy, kid-approved chicken nuggets made from ground chicken are crispy on the outside and juicy on the inside. Better than fast food, it also has veggies hidden inside!

My sister-in-law and I set out to make a chicken stir-fry for my picky niece, and she loved it (and so did the rest of my family!). This homemade chicken nuggets recipe uses ground chicken, frozen cauliflower rice (you wouldn’t know it!), and seasonings coated in breadcrumbs and cooked in the air fryer or oven. It’s a little more time consuming than using chicken tenders but it’s totally worth it! You can double the amount and freeze the rest, so you have healthy, homemade frozen chicken nuggets that you can feel good about feeding your kids. - Chicken: For this chicken tenderloin recipe, I chose 93% ground chicken (a combination of chicken thighs and breast meat) instead of ground chicken breasts, which come out too dry. If you want to use skinless chicken breasts, use this recipe instead.

How to make chicken nuggets
- Chicken formation: Combine ground chicken, cauliflower rice, and spices in a large bowl. Shape the mixture into 30 flat, round pieces, each weighing about 25 grams.
- Nuggets bread: Crack the egg into a bowl and pour the bread crumbs into another bowl. Dip the chicken mixture in the eggs, then in the breadcrumbs.
- Chicken nuggets in the air fryer: Place them in the air fryer basket in a single layer. Spray the tops with oil and air fry for eight to nine minutes at 400°F, flipping halfway through and spraying the other sides with oil. Cook until the pieces are golden and fully cooked, then repeat the process with the remaining pieces.
- Grilled chicken nuggets: If you don’t have an air fryer, bake them in the oven. Place it in a greased baking tray, and sprinkle the chicken with oil. Bake for 10 minutes at 450°F. Flip the pieces over, drizzle with more oil, and bake for an additional 6 minutes, until golden brown.

- Bread crumbs: Replace the bread crumbs with seasoned panko bread crumbs.
