Since it’s officially Thanksgiving week and only 3 days to go, I wanted to sneak in a recipe for a popular Thanksgiving side dish – our famous Cranberry Salad. Have you ever heard about that? It’s so easy to make!

Everything is made from scratch, so we use fresh pineapple and homemade whipped cream instead of canned crushed pineapple and cool whip…so we’re updating the recipe a bit. If you want to use crushed pineapple and Cool Whip, I’ll share those alternatives as well.

- pineapple -I suggest using fresh pineapple as you can taste the difference using fresh, sweet pineapple.
- Mini marshmallow -This adds a sweet, creamy texture to the cranberry salad…and the kids love it!
- Cream cheese -Use soft, full-fat cream cheese to make sure it is completely smooth.
- Heavy cream -Making homemade whipped cream is the difference maker in this cranberry fluff recipe.

How to prepare cranberry salad:
This is an easy cranberry salad recipe that can be prepared in advance.
- Add the cranberries to the food processor and pulse Until they are completely chopped, but not mashed. If you want to add fresh pineapple at the same time, you can do that as well.
- Pour the cranberries into a large bowl. Stir in sugar. Cover and refrigerate for about an hour. Strain the juice.

- While the pineapple and cranberry mixture coolsMake whipped cream at home. In a medium bowl, beat softened cream cheese until completely smooth. Make sure the cream cheese is softened so it becomes smooth and creamy. Add the heavy cream and whip until stiff peaks form.

- Add cream mixture to pineapple and cranberry mixture. Fold in marshmallows.
- Cover and cool For several hours or throughout the night.
