There are many reasons why more and more New Zealanders are following a plant-based diet, even if they don’t stick to it exclusively. They may be trying to do their part to combat climate change, or they may be motivated by health concerns. They may have been advised to reduce their consumption of animal products for health reasons, or they may have been forced to do so because of high prices.

When you think about it like this, it’s no surprise that “more plant-based recipes” is one of the most popular reader requests I receive. I always try to incorporate at least two meat-free meals into my split dinner plan β€” but here’s a full week of them (note that one or two requires you to choose a vegetarian option, e.g. vegetable broth instead of chicken broth, but that’s mentioned in the recipe).

If for any reason you want to add meat to these recipes, don’t hesitate: chorizo ​​is a classic minestrone addition. You can prepare some kofta to put on a mezze plate, or halve the portions of salad and serve it alongside a piece of grilled meat.

But plant-based eating has come a long way since the advent of nut loaf. These recipes are all so delicious, I think you’ll love them whether you eat animal products or not.
