Festive foods take on a new meaning as we head into the winter holidays, especially foods made with great craft beer.

This delicious recipe comes our way from Sierra Nevada Brewing Company, which is based in Chico, California and uses a brewery Celebrate IPA6.8% ABV Fresh Hop India Pale Ale, is widely available during the holiday season.

For many, the annual Sierra Nevada Celebration Edition marks the official start of the winter holidays, and since you’ll have some leftover, it’s also the perfect companion while cooking.

So let’s do this!

Sierra Nevada Celebration IPA Caramel Popcorn

ingredients

Celebratory Candy Beer – Sierra Nevada Celebration IPA Caramel Popcorn2 cups corn

2 tablespoons vegetable oil

2 cups toasted nuts (such as pecans, almonds, peanuts)

1 cup dried fruit (such as cranberries, cherries)

Non-stick vegetable oil spray

1/2 cup Celebration IPA

1/2 cup water

2 1/2 cup sugar

1 teaspoon salt

1/2 cup light corn syrup

1/2 tablespoon of baking soda

1 stick of unsalted butter

Step 1

In a large bowl with a lid, add the vegetable oil and corn. With the lid on the pot, cook over fairly low heat, shaking the pot constantly, for about 8 minutes or until all the beans have popped. Pour the crumbled corn into a large bowl and set aside.

In a heavy-bottomed saucepan, combine Celebration, water, sugar, salt and light corn syrup. Cook over medium heat until mixture is dark amber in color, about 300 degrees.

Step 3

Remove the pot from the heat, add the baking soda and butter, and stir for about 30 seconds. Warning: This will produce a large amount of steam. Use a long whisk and avoid touching the top of the sauce bowl.

Step 4

Working quickly and carefully, then pour the caramel sauce over the popped corn. Stir to evenly coat the popped corn. Add nuts and fruits.

Step 5

Pour the finished mixture onto a tray covered with parchment paper or aluminum foil that has been sprayed with non-stick vegetable oil spray.
