I live for a pizza that I can make a million different ways and this one does not disappoint. Add an incredibly herby sauce, and well…there’s no argument that this is unbelievable.

This is one of my favorite ways to make quick and delicious pizza.

We love using naan bread for pizza first. It’s so fluffy, tender and delicious. I have a recipe for my garlic butter here and it is amazing. It requires no yeast and is very easy to make. So, if you want to start from scratch, go for it!

Otherwise, just grab some of your favorite store bought naan because we’ll be putting it on the grill anyway.

I love how easy it is to turn these into anything you want. Naan or pita bread, any veggie, chimichurri drizzle – even the cheese can be customized to your liking!

Really, it’s as simple as it can be.

Now, vegetables! I would never use an actual “recipe” for the vegetarian part. I basically use whatever I have on hand. Whatever it is looks like it’s about to die a slow death in my freezer drawer or whatever I have left over from the week. Or whatever everyone wants!

These are all very delicious and you can’t go wrong.

I have a lot of tutorials on roasted vegetables, but I mostly stick to one rule: I combine vegetables that have similar cooking times. For example, I usually keep thin asparagus spears and mushroom slices together. I also keep peppers and onions together. This way, nothing burns, and I can always pull the pan off the grill.

Talk about grill pans! I love using them for vegetables. If you grill veggies a lot like we do, I highly suggest using this pan because it keeps everything nicely contained. You need quality grill heat!

Of course, you can also find one on Amazon and I use one like that too. I have purchased mine from ALDI in years past. I like to have two roasting pans on hand so I can use them for different vegetables. It is important!

I like to use fresh mozzarella. So I load naan bread with roasted veggies and fresh mozzarella (sometimes I buy the seasoned kind!) and then place it on the grill until the cheese melts. Oh, and I can’t forget the most important part – the chimichurri!

Chimichurri is a great sauce that you can keep in the fridge to elevate your meals. It is absolutely delicious and adds so much to any recipe. This is something you can prepare a few hours or a day in advance and it will keep well in the fridge until you are ready to use it. Eddie loves it on steak but my favorite use is for vegetables.

This is how our naan pizza comes about. An array of vegetables, chimichurri, cheese and a quick grill to bring it all together. Absolutely delicious and charred to perfection.

Grilled vegetable naan pizza

Pizza

  • 2 Pepper, Chopped
  • 1 red onion, Chopped
  • 10 Asparagus spears
  • 1 cup Chopped mushrooms
  • 1 cup Broccoli flowers
  • 1 cup Cauliflower flowers
  • olive oil, To spray
  • Kosher salt and pepper
  • 4 to cut Nan
  • 8 ounce fresh mozzarella cheese, Torn into pieces

  • 1 cup Fresh coriander
  • 2/3 cup Fresh parsley
  • 1/4 cup New spices
  • 2 garlic cloves, minced
  • 1/4 cup Red wine vinegar
  • 2/3 cup olive oil
  • 1/2 small spoon salt
  • 1/2 small spoon Pepper
  • 1/4 small spoon Crushed red pepper flakes
  • Heat the grill to the highest setting. Let it heat for at least 10 minutes.

  • Divide vegetables between grill pans. If you don’t have grill pans, you can also use foil sprayed with olive oil. I like to combine vegetables that have similar cooking times. So I combine the tender asparagus spears and sliced ​​mushrooms, then another bowl with the peppers, onions and cauliflower.

  • Drizzle vegetables all over with olive oil or spray with olive oil spray. Sprinkle salt and pepper everywhere.

  • Place grill pans (or aluminum foil) directly on the grill. Close the lid and grill for 6 to 8 minutes, turning several times during the cooking time. Asparagus and mushrooms will cook quickly, and peppers, onions, cauliflower, etc. will take longer. You may need another 5 to 10 minutes – you can cook them for as long as you want. I like mine very charred and I did!

  • Brush the naan bread completely with olive oil. Top with a mixture of roasted vegetables and shredded mozzarella cheese. Reduce grill heat to medium-low so the naan doesn’t burn. Place the naan directly on the grill and close the lid. Cook until the cheese melts, turning the bread several times if necessary.

  • Remove the naan bread from the grill and sprinkle chimichurri all over. Use as much as you want! Serve immediately.

  • Combine parsley, coriander, oregano and garlic in a food processor and grind until leaves and small pieces remain. Add vinegar and pulse again. With the processor running, add the olive oil and mix until combined. Add salt, pepper and red pepper flakes. Taste and season additionally if necessary.
