Leftover sprouts?  Use it to prepare delicious pesto sauce in five minutes

Now that Christmas has passed, if you’re like me, you’ll be spending the next few days eating leftovers from the big day and making increasingly ridiculous sandwiches to eat.

However, one thing I’ve never been able to get into is the sprouts in the sandwich. As much as I’m a huge supporter of Silly Christmas Sarnies, even I have to draw the line somewhere.

Imagine my absolute delight when I found Myriad Recipes on TikTok and their innovative approach to treating leftover sprouts as… pesto!

In the video, the creator and foodie gives us a simple recipe for leftover pesto sprouts.

You will need:

  • 10 remaining Brussels sprouts

  • 2 tablespoons or a small handful of basil leaves

  • 2 tablespoons pine nuts

  • One clove of garlic, minced

  • 2 tablespoons of grated Parmesan

  • 3 tablespoons of olive oil

  • 1/2 teaspoon pepper

  • 1 teaspoon of sugar

  • 1/2 lemon, juice

Once you have all the above ingredients, simply blend them together in a blender or using a hand blender and you will have a bright, delicious pesto!

You should actually do this, warns Em Likes Sprouts for this dish because the flavor of the sprouts “plays a major role in this dish” but if you’re worried about the flavor overpowering the dish, you can add more pepper, parmesan or garlic as you go so it tastes better to you.

Im recommends serving this with 150g pasta and cooked cherry tomatoes, served with a garnish of fresh basil leaves.
