Mortadella sandwich recipe with ricotta, pistachios and pesto

I have just returned from Bologna, where I searched every day for a different sandwich shop to buy a mortadella sandwich. One shop sent the staples (focaccia and mortadella) to a new level with the addition of fig jam (*not* fig butter). Another store serves it on Tegel, slightly warm. I miss these sandwiches! I can’t wait to try this recipe, as I’ve mastered making homemade focaccia, but I’ll avoid the burrata (which is lactose intolerant) and use my own fig jam. And yes!
