Opening of the butcher shop in Cornwall Square

cornwall ontario – Chef Luke McCabe will be showcasing an exceptional range of quality cuts of meat from around the world at the Upper Vault, the latest addition to Cornwall Square Food Hall.
“There have been a lot of people clamoring for a butcher shop that offers hand-cut meats and heritage breeds from around the world,” said Ian Bentley, hospitality director at Weaving Baskets Group, which owns the mall. “We aim for The Upper Vault to become a top choice for high-quality protein connoisseurs.”
The Upper Vault will also offer a limited selection of delicious sandwiches as well as pantry staples including condiments as well as a meat counter. Cornwall foodies will now have an outlet where they can find cuts such as bavette, skirt steak, picanha, tri-rib, short ribs, tomahawk steaks and much more. Because a butcher shop is only as good as the producers who supply it, Chef McCabe sources The Upper Vault’s stock from the best suppliers.
“You can expect to see Iberico pork from Spain, Wagyu beef from Japan, lamb from New Zealand, etc.,” explains Chef McCabe. “We will be cutting the best cuts on site and also free up space in our dry aging cabinet for those looking to upgrade their meat.”
The Upper Vault will serve as a small satellite outlet for Butcher’s Vault and Fromagerie, another landmark WBG project expected to open in 2024. Located on the lower level of the plaza, Butcher’s Vault and Fromagerie will feature an expanded butchery selection. service, as well as lounge space for patrons.
The opening of The Upper Vault is one of the World Bank Group’s ongoing investments in the community.
