Sage Restaurant is pleased to announce its first wine dinner of the season scheduled for Wednesday, October 11 from 6:30 to 9 p.m. Presented by Executive Chef Christopher Covelli, the evening will consist of a six-course dining experience, expertly paired with wine. From ZD Napa Valley Wines. John Bucky, National Sales and Tasting Room Manager for ZD Wines, will be in attendance and guests will have the opportunity to meet and mingle with him. The six-course meal will be limited to just 50 guests, and will begin with cucumber appetizers with smoked salmon, creamy fresh vegetable chip cups, and tuna tacos. The evening continues with tomato tart and basil-infused goat cheese mousse; Seared U-10 scallops with truffle-scented duxelles; Raviolo stuffed with prosciutto, cannellini beans, and braised short rib with carbonara potatoes and seasonal mushrooms. Guests will conclude their meal with a specialty dessert. Throughout the evening, each course will be expertly paired with wines from ZD, including the 2012 Cabernet Sauvignon Library Select and 2013 Cabernet Sauvignon Reserve.
