WAYNE, Pa. (CBS) — Thanksgiving dinner is quickly approaching, and for many home cooks, the preparation has already begun.

Albert Alvarado, executive chef at White Dog Café in Wayne, shared some cooking tips for a big meal as well as ways to transform leftovers with Chandler Lutz of CBS News Philadelphia.

The most important thing to remember on Thursday is to baste the turkey as it cooks, Alvarado said. Putting butter under the turkey’s skin “goes a long way toward making it nice and juicy,” he added.

When it comes to sides, preparation is key.

“You want to try to do it today, the day before,” he said. “You want it to be… oven-ready, cut, cleaned, and ready to use, so that when you come in and all your family starts walking around, you don’t have to sit there and fiddle with the knife.”

Season leftovers

For many, Thursday’s meal is just the beginning, and leftovers are the real star of the holiday.

“Thanksgiving leftovers are sometimes some of the things people think about now more than the actual dinner,” Alvarado said.

With that in mind, Alvarado shared some inspiration on how to use Thanksgiving leftovers for every meal this weekend. It even includes ham, which is commonly found on the Thanksgiving tables of Latino families.

“What we like to do here at White Dog is we like to think about all meals,” he said.

Here are some of his recommendations:

  • Breakfast and brunch: Sweet potato pancakes made with leftover candied potatoes or mashed sweet potatoes. Add sour cream, candied pecans, and ginger crumbs.
  • Lunch: Grilled pork chops on a Hawaiian roll with pineapple slaw.
  • Dinner: Turkey shepherd’s pie, made with turkey, gravy, vegetables and mashed potatoes, topped with Parmesan cheese.
