Why would you want to skip ordering seafood carbonara at a restaurant?

If you really want to eat something oceanic, it’s generally wise to look for simpler dishes with ingredients that don’t overwhelm the fish or shellfish you have on hand. Consider getting a simple piece of fish, grilled or baked. Or, if you really want pasta, stick to dishes with lighter ingredients — think a citrus or white wine sauce with a touch of butter, if available. “If the seafood is fresh, it’s good on its own, it doesn’t need heavy flavors and it should be the star of the dish,” explains culinary director Dale Leandro (via Eat This, Not That).

It’s similar to why you’ll sometimes hear advice to skip specials when ordering at a restaurant: It’s a smart way to get rid of accumulated, perishable ingredients, some of which may already be approaching their expiration date. Even if carbonara or Alfredo sauce is not used to mask the taste or smell of fish that is not fresh, it may mask seafood that is not particularly high quality, such as frozen food. Heavy cream may make bland, watery, or chewy qualities in seafood less noticeable, but if you’re paying restaurant prices, you probably want to be able to taste what you’re eating.
